Today we are going to talk about Teruel ham, known for being the best ham in the world from white pork. They have the certification of Denomination of Origin, which recognizes the good work and respect for the tradition of the producers of this ham.

All its production takes place in Teruel. It is usually raised in the low-lying areas, such as Matarraña and Bajo Aragón and is cured in the mountains of Albarracín, Gúdar-Javalambre and Jiloca. The pigs used to make it are born, raised and slaughtered in Teruel. In addition, livestock must be conformed by pigs whose breed crosses are Landrace and Large White from the female and Duroc from the male.

You will recognize it by:

  • His numbered label.

This seal surrounds the ham or shoulder in the hoof and contains information that let us know all the processes of the piece. It is usually accompanied by a traceability code marked on the skin of the ham.

  • Its characteristic fire star.

It is marked on the rind, at the back of the ham and shoulder and is accompanied by the word TERUEL.

  • Its weight is usually greater than or equal to 7Kg.

The shape is elongated and rounded at its edges, it may be presented with the entire rind or profiled in a “V” cut and must have the complete hoof. The hoof of the hams that do not accomplish quality controls are cutted off.

  • Its healing must be carried out at an altitude equal to or greater than 800 meters.

The minimum duration of the elaboration process must be 60 weeks and it must have been done in the province of Teruel.

  • Its flavor is delicate, very pleasant and slightly salty.

Its meat is red and bright, with a greasy fat to the touch, yellowish white color, aromatic and of a pleasant taste.
