Valsotillo Wine, the heart of the Ribera del Duero Designation of Origin

In today's post we focus on ValSotillo Wine, a representative relic of the Ribera del Duero Designation of Origin. This wine belongs to the Ismael Arroyo Winery founded in 1979 in Sotillo de la Ribera, a town located in the mountains and surrounded by vineyards and hills. Its founder, Ismael Arroyo, fought tirelessly to create the Designation of Origin that his wines receive today, and that is how the Ribera del Duero DO was created in 1982 thanks to the union of a minority of winemakers.

The Ismael Arroyo Winery is characterized by its underground winery of around 2000 square meters, whose galleries were excavated more than 400 years ago. Since then, the tradition of winemaking has been passed down from generation to generation within the family of its founder.  This great inherited dedication and the excellent quality of its rock soil are the perfect combination for the ageing in barrels of a wine of such quality as the ValSotillo red wine.

Ribera del Duero Designation of Origin

As we discovered at the beginning of the article, it was due to the initiative of a series of winegrowers and winemakers, among whom was Ismael Arroyo, which allowed the creation of the renowned Designation of Origin, whose main objective was to promote the vineyards of the Ribera del Duero.

It was in 1982 when the Ministry of Agriculture, Fisheries and Food finally granted the Ribera del Duero the Designation of Origin as we know it today. Consequently, the consumer is assured that each of the bottles labelled and numbered with said D.O. has passed a series of rigorous controls before being materialised in their glasses.

Ageing of Valsotillo Wines

ValSotillo Wine is aged in the historic underground galleries of the Ismael Arroyo Winery, whose excellent natural conditions give rise to an exquisite quality. ValSotillo Wine enjoys a constant temperature of between 11ºC and 12ºC throughout the year. In addition, the absence of noise, light and any type of vibration gives rise to an excellent ageing that is comparable to very few.

Furthermore, ValSotillo Wine is aged in American and French oak barrels, which have a capacity of 225 litres. Until it is released to the market, the wine rests in the bottle, so that it finishes getting ready to be offered in optimal conditions.
