This wine has a wonderful story...
Once upon a time there was a Michelin Star Restaurant in Spain that wanted to have a white wine and a red wine, which were produced ‘exclusively’ for their restaurant. After searching countless wineries, finally the owner of this very important restaurant came across Bodegas Ontañón, who offered them this spectacular wine full of aromas and complexity. It won the exquisite palate of the owner of the Michelin Star and today we offer it to you in Jamonarium.
From this incredible union Ontañón Kaori was finally born. Kaori is a beautiful Japanese word for aroma, fragrance or perfume. Without the presence of aromas it is impossible to conceive of a wine and the complexity of its fragrance define it as a fingerprint.
The key to the cellar work of this wine is the maximum safeguarding of all the varietal characteristics of our high-altitude Tempranillo grapes, which are so special due to their genetic identity and the characteristics given to them by their environment. The essence is to protect its aromatic imprint and multiply its values of finesse, elegance and the silkiness of its polished tannins.
Ontañón Kaori is aged for 12 to 15 months in medium toast American oak barrels.
