This Bellota Ibérico Shoulder, 50% Iberian Breed has been made in the area of ​​Castilla y León or Andalucía and has more than 24 months of curying time. This pure Iberian piece belongs to the front leg of the pig, which has been fed on acorns and pastures.

Castilla y León is one of the main producing areas of iberian bellota products thanks to its climate of hot summers and soft winters and its wide expanses of pastures in which the pigs graze. In addition, its fooding gives it that characteristic flavor of Ibérico Bellota Shoulders, with an intense Iberian flavor with fruity touches. Its meat is of a colour from an intense red to pinkish color and its fat, between white and transparent, has a creamy texture and an intense aroma.

Andalusia, with its Mediterranean climate and privileged geographical location, creates ideal conditions for raising pigs destined for the production of exceptional quality hams. The wooded pastures (dehesas), rich in oak and cork trees, provide acorns, a fundamental food for the development of Iberian pigs. The wide thermal range between day and night, together with the dry winds that sweep through the region, contribute to a slow and natural curing process, imbuing the hams with an unmistakable flavor, aroma, and texture, featuring infiltrated fat and the perfect touch of salt.
