As you know, cutting cheese requires a certain technique and of course, suitable tools. You started the task of slicing them and you have encountered an important variety of knives. Which one to choose? Don't worry, we explain what each one is used for.

The rule says that we can classify cheeses into two types: soft or semi-hard cheese, and hard cheese. Therefore the design of the knives will be adapted to these two categories.

What types of knives there are to slice cheeses?

  • Knives for soft or semi-hard cheeses will have the plain and perforated blade.
  • Knives designed for hard cheeses will be differentiated by having the serrated edge and without any perforation.

The main reason for this difference is that the perforations in the blade are designed to offer no resistance when cutting the cheese, since the portion will not stick to the knife due to the vacuum. In addition, at the end of the blade we will usually find one or two points that will also may be used to puncture the slice and serve it in a hygienic and comfortable way.

In the case of extra soft cheeses such as Roquefort or Camembert, we will find knives with particular designs. Specifically, we talk about those that come equipped with a thread, known as lyre that will serve as the cutting blade. This steel wire is very thin that it will allow this type of cheese to work without being broken.

In the soft cheese section, we can also find the shovel knife, which will allow us to serve the cutted piece of cheese directly since the same tool will be able to cut the piece and serve it.

Halfway between both categories we find those known as versatile knives, serrated and fine blade. Although they are indicated for soft or semi-hard cheeses, they may be used for some hard cheeses too.

And we end with a type of knife indicated exclusively for hard cheeses: the double-handled knifes. This is the best known and is very useful for cutting pieces with a compact and consistent texture due to its healing.
