Organic Iberian ham, the Bellota without additives
Iberian ham occupies a privileged place as one of the most emblematic products not only of gastronomy but of Spanish culture in general. Its unmistakable flavor, aroma and texture have conquered palates around the world.
In today's post we focus on organic Iberian ham, which not only maintains all the characteristics that have made Iberian ham famous, but also adds additional value: it is a product without additives and without preservatives, respectful of both the environment and health.
What is organic Iberian ham?
Organic Iberian ham is a type of ham that comes from Iberian pigs raised in certified organic pastures, which is why they have had to pass a series of controls by Europe. In addition to having more than 3 hectares per organic pig, these animals feed exclusively on acorns, herbs and other natural resources available in their environment. As we have mentioned, what distinguishes organic ham from other types of ham is the absence of any type of chemical additive or preservative during its production. This means that the final product is 100% natural, maintaining the properties and benefits of Iberian pork intact without any artificial alteration.
The production process of organic Iberian ham
The production process of organic Iberian ham begins with the rearing of pigs in conditions of total freedom in the pastures. These animals have access to large areas of land where they feed naturally, mainly on acorns during the montanera, that is, the period in which the acorns fall from the oaks, normally between March and November. This diet rich in monounsaturated fatty acids is essential to obtain a high-quality ham, with a healthy fat profile and exceptional flavor.
Once the pigs have reached the ideal weight, the process of making the ham begins. Unlike other hams, in the case of organic Iberian ham no preservatives or additives are used. Salt is the only ingredient added during curing, which is carried out slowly and in a controlled manner, allowing the ham to develop its characteristic flavor and aroma naturally. This entire process results in what we know as 100% Iberian Acorn-fed Organic Ham without additives.
As far as the investment in time is concerned, from the moment the decision is made to produce an organic ham until its production begins, approximately 4 years can pass, one of the reasons why organic farms are still uncommon in Spain. First, a farm must undergo a 2-year quarantine period to obtain organic certification.
Then, at least 18 more months are needed for the breeding and proper feeding of the pigs, which must undergo a curing and maturing process that can take between 3 and 4 years. In total, from the moment a company decides to produce organic ham until the piece is ready for the market, around 8 years can pass.
