Iberian ham, the jewel of Spanish gastronomy, can present peculiarities that often generate doubts in consumers. It is essential to understand these "anomalies" to distinguish them from defects and to fully enjoy this product. These characteristics, far from being indicators of poor quality, can be signs of an adequate curing process and a quality product.

What are the anomalies of Iberian ham?
The anomalies in Iberian ham are natural characteristics that arise during its production and maturation. They should not be confused with defects caused by poor handling or conservation. Knowing them allows the consumer to appreciate the ham in its entirety, appreciating its nuances and particularities.
Types of anomalies and how to identify them
White spots or tyrosine crystals in Iberian or Serrano ham
These small white spots that appear on the surface of the ham are tyrosine crystals, a natural amino acid. They are formed during the breakdown of proteins during the curing process. Their presence is an indicator of slow and adequate curing, and therefore, of quality. They are completely harmless and do not alter the flavour of the ham.
Irregular colouring of Iberian or Serrano ham
The ham may show variations in the shade of red, ranging from deep red to purple. This diversity of colours is normal and is due to the distribution of myoglobin and other pigments in the meat. These differences in colour are part of the authenticity of the product and do not indicate any problem.
Inconsistent texture of the piece of Iberian or Serrano ham
It is common for the ham to have areas with different textures, some softer and others harder. This variation is due to the distribution of fat and the very nature of the piece. The important thing is that the general texture is pleasant and that it does not have excessively soft or slimy areas.
Smell of the piece of Iberian or Serrano ham

Slimy texture
