Guijuelo, the Iberian Gold Rush

Today we are talking about Guijuelo. It is located in an area between Alba de Tormes and Sierra de Béjar, in the province of Salamanca.

There are not many traditional buildings left due to the strong expansion that the municipality has suffered throughout its history. We highlight its Plaza Mayor and its Plaza de Julián Coca, or also known as The Plaza de los Pigs because there is where the animal markets were done.

If you go there, you can also visit the Ermita de la Virgen de Valparaíso located next to the road of the town, or the Iglesia de Nuestra Señora de la Asunción or known as the New Church. The first stone was placed by the Bishop of Salamanca, Don Fray Francisco Barbado Viejo. Another of the monuments is El Torreón, located at the top of the town.

What makes Guijuelo truly worth visiting?

Well, the main reason is their iberian hams. They have been cured by the cold and dry winds from the north since 1986 and have a Protected Designation of Origin. This industry was created almost two centuries ago and lived its splendor with the arrival of the railway, making the arrival of these animals from other parts of Spain easier.

For the ham to be considered DO Guijuelo, it must come from an Iberian pig. It must have been raised and fed in oak and cork oak pastures in different regions around Salamanca, Ávila, Zamora, Segovia, Cáceres, Badajoz, Seville, Córdoba, Huelva, Ciudad Real and Toledo. In addition, the curing time should be three years minimum before these Guijuelo hams may be ready to be marketed.
