Whole Iberian hams and shoulders have a slim shinbone and black hoof, have a slightly fruity flavor and have fat infiltrated into muscle mass due to the genetics of Iberian pigs. Among the Iberian ham, cebo hams have a white label; Cebo de Campo hams are green labeled; Bellota hams have red label and 100% Iberico Pata Negra Bellota hams have the black label. On the other hand, cured and serrano hams come from white pigs.
