The 100% pure ibérico Bellota Shoulder Summum DO Jabugo (Huelva) pata negra is a shoulder of the highest quality, more than 2 years cured. These shoulders are cured in the area of Jabugo (Huelva), where warm summers make hams and shoulders of strong flavor and juicy texture. Their meat colour is deep red and its fat is transparent white.


The "caña" (shinbone) is thin and fat infiltration inferior to other Bellota. Fruity and strong aroma. Such a spectacular Bellota pata negra shoulder!

Preparation: It comes from each of the two pieces of meat that are next to the spine below the pig ribs. It’s marinated with salt, natural pepper and spices as it has been maked traditionally for many, many years. The curing process takes a minimum of 3 months to get a delicious iberian dish.

Taste: Mild flavour, juicy and balanced with a unique texture due to the perfect combination of traditional recipe and care during its production.

Curiosities: Reddish colour, mild aroma, juiciness, unique. It’s a pleasure for all the gourmets.

Your product will be cut in pieces just when your order arrives. Then the product will be vacuum-packed to retain the original quality, aroma and flavour.

The taste is god but from 5.250kg after cutting I got only 80g of ham.It was very thin with very little usable meat.

Hello Mario, thanks for your opinion. If your shoulder ham has too much fat you can contact us and send us more information (pictures, details) so we can value the issue. I imagine you wanted to say 800g instead 80g. If the ham has 800g is not a correct ham. The shoulder hams has around 60% of fat, bone and skin. Thant means that ina shoulder of 5.250Kg you should have around 2.100Kg of ham. We will be glad to have more information and see how to solve this issue.
