"La Cala" - How to select a good ham or shoulder ham?

To select the ham or a shoulder ham in its optimum curing point is not an easy task. You need a specialist with large experience on this field. When we receive your order of a ham, we select your ham within its ideal curing point and with the weight you have ordered. This important process is carried out using all our senses:

  • The sense of touch allows us to know the curing process of the ham, touching all the different parts of it. The exterior fat provides us information about the quality and how it has been cured successfully.
  • The sense of sight gives us information about the proportion of fat. The different colour in the ham explains about the curing process and some areas used to have wrinkles on the skin.
  • The sense of smell comes with the “cala” process. This is a sharpened beef bone which is introduced near the ham’s bone to check its aroma. We get information about the curing process, the salt and the quality of the product.
  • The sense of taste is not our job, that’s left to you when you enjoy such a delicious dish

The selection of a good ham is the work of artisans. The selection criteria can not be explained in a few lines and it should take years to be able to have a good classification criteria. The years of experience that support us allow us to have the experience needed to choose the piece that best suits you.

It should be noted that two pieces will be different, as their production is due to natural and artisanal processes.

How products are vacuum-packed?

When we cut the slices we place them in a thin silver tray.

When we get the right weight of the product we introduced it in a special plastic bag.

Then we put the plastic bag in the vacuum packing machine.

This process is done without delay to preserve its original quality, all flavour and aroma of the packed product.

When you want to serve it, we recommend to open it 15 minutes before so that the product recovers its original oily texture and the aroma.

2. Product presentation

All our products are gift-wrapped and packed for transport without extra cost. The packaging is adapted to the product size so that you get at home in perfect conditions.

Presentation - Whole ham and shoulder ham

The ham will be selected in its optimum curing time just when you order the product. It will be wrapped and packaged for its full protection during transportation.

Shipping package:

  • Breathable paper.
  • Cotton cover for decoration and conservation.
  • Decorative red, green or yellow mesh.
  • Box with handle for easy and secure transport.
  • A ribbon around the box to ensure transport safety.

When you receive the package we recommend unwrapping the ham and placing it in a ham holder or hanging it in a fresh room. Nevertheless, you can keep the product wrapped a few days in a cool room, if necessary.

Presentation - Products in pieces and boneless products

Your product will be cut in pieces just when your order arrives. Then the product will be vacuum-packed to retain the original quality, aroma and flavour.

Vacuum packaging process:

  • The product is vacuum-packed in transparent plastic bags, just before it’s sent.
  • This process protects the product and retains all its quality of taste and freshness.

Shipping package:

  • Box with a handle for easy and secure transportation.
  • A strap around the box ensures its safe transportation.

We recommend you to take the product out of the plastic bag 15 minutes before eating it. The vacuum-packed products we sell can be stored in the fridge for a long time. Please check the expiry date of every product.

Presentation - Sliced products

The product will be slice just before being vacuum-packed for shipping so that it retains its original quality, aroma and flavour.

We slice it and vacuum-pack it:

  • The product is cut into thin slices just when the order arrives.
  • Vacuum-packed in 100gr packs just after it’s being cut.
  • This process protects the product and retains all its quality of taste and freshness.
  • The packs are shipped inside a small box with a safety strap for security.

This presentation allows you to eat delicious products sliced and with all their aroma and flavour.

We recommend you to take the product out of the plastic bag 15 minutes before eating it. The vacuum-packed products we sell can be stored in the fridge for 6 months. Please check the expiry date of each product.

Presentation - Wine, cava and champagne

The shipping of bottles of wine and cava is completely secure with Jamonarium.com packaging witch adequate transportation to the product. It is also fully insured.

Bottles are sent in security boxes with rigid inner wrap for each bottle separately.

This package is approved by our courier company so that its contents will be carefully shipped and insured in case of any damage.
