When we receive your order of a ham, we select your ham within its ideal curing point and with the weight you have ordered. This important process is carried out using all our senses:
The selection of a good ham is the work of artisans. The selection criteria can not be explained in a few lines and it should take years to be able to have a good classification criteria.
