This Extra Virgin Olive Oil blend offers exceptional health benefits thanks to its high content of natural antioxidants, especially polyphenols present in the Nevadillo Negro variety, known for their ability to fight oxidative stress and protect the cardiovascular system. Arbequina contributes monounsaturated fatty acids that promote heart health, while Picual, rich in oleocanthal, helps to reduce inflammation. The combination of these varieties enhances the healthy properties of the oil, making it a natural ally for strengthening the immune system and protecting the body from degenerative diseases.

Harvest: Picual DDA* olives are harvested in the Tabernas Desert (Almeria) between mid-October and November, prioritising early veraison with 65-75% of the olives still green. The Nevadillo Negro olives, native to Sierra Morena, are also harvested at the end of October at early veraison, maintaining the maximum of their antioxidant properties, as this variety stands out as one of the healthiest in Spain and is among the four healthiest in the world due to its high polyphenol content. The Arbequina variety, on the other hand, is harvested at the beginning of the ripening process, bringing smoothness and freshness to the final blend.

Elaboration: Each variety is processed with two-phase cold extraction techniques, preserving optimum aromas and qualities. In the case of Nevadillo Negro, transport is careful, and processing in less than two hours allows the aromatic intensity of this olive to be captured, with a short shake that enhances its antioxidant character. The Picual DDA* and Arbequina are also cold processed, ensuring that the Picual retains its robust notes and the Arbequina its fruity and herbaceous nuances, such as green apple and almond, which add a sweet and balanced touch to the final oil.
