El sabor es muy bueno y la parte delgada y suave es un encanto. Lamentablemente, tal vez siendo una paleta, hay mas de la mitad de el producto que es demasiado curado (enviejecido entiendo) y se necesitan dientes de tiburón que todavía no me han salido. Es una lástima, me ocurrió también con el serrano y no he todavia entendido si es una prerogativa de el jamon o mas bien es demasiado seco y con curación excesiva.por razones que ignoro, tal vez por el precio. Claro que la parte seca es excelente como sabor, pero tengo mucha dificultad a comerla. La próxima vez intentaré con algo distinto
