Its clean and elegant aroma reveals notes of evolved milk, caramel, leather and wool, derived from raw milk. As for its texture, it is distinguished by its pleasant buttery sensation and slightly floury graininess.
The flavor of this cheese is very intense and mild at first, but lingers in the mouth. Clean animal aromas are perceived and a very pleasant spicy aftertaste that appears at the end, accompanied by notes of nuts and caramel.
