Beiardi matured cheese in portion is made using a mixture of raw cow's milk primarily, and raw sheep's milk. Milk from cows and sheep from the Basque Country and Navarre have been used, guaranteeing the quality of the product and ensuring that the raw material is locally sourced.
The minimum maturation period for this cheese is 4 months. Its rind is smooth, the cheese is ivory in color and its flavor is creamy and smooth.
We recommend taking the matured Beiardi Cheese mixes raw sheep and cow milk as an aperitif or starter, as part of a high quality cheese plate to serve alone with a good glass of wine.

The Artisian Goat Cheese from Garrotxa, Sant Gil d’Albió, is made with pasteurized goat’s milk, enzymatic curd and two months of maturation. The Artisian Goat Cheese from Garrotxa is slightly salty and creamy with a characteristic bloomy rind, this rind is the result of a long elaboration process, during this process a bark fungus known as "Gray Penicillium" develops all around the rind.
The fungus neutralizes the acidity and balances the taste and giving adding a touch of cellar.
