This old cured sheep's cheese is made from selected raw sheep's milk and is prepared according to an artisan recipe. The milk is not pasteurised, but thermised to keep all its properties intact, and natural rennet is used to coagulate the milk.

After the pressing process, the cheese is unmoulded, thus obtaining a natural rind free of artificial products, which acquires its colour during the eleven-month maturing process in the brand's chambers.
