ABOUT THE ACCESSORIES
The rotating holder features a bushing that allows the leg to be turned 360° without loosening the clamp or dismantling the unit. A fixed holder requires unscrewing the clamp to manually rotate the ham when switching cutting areas.
The tilting holder allows you to adjust the longitudinal angle of the ham. It is ideal if you want to ergonomically adapt the cutting height to your posture or if you slice ham frequently.
Wipe down the exterior with a cloth dampened with warm water and mild soap to remove any grease residue. For natural wood ham holders, avoid submerging them in water to prevent the wood from absorbing moisture or warping.
Wood provides an aesthetic, warm, and traditional look for the home. Stainless steel and high-density polyethylene offer superior base stability, extreme durability, and impeccable hygiene, making them the preferred choice for the hospitality industry or heavy use.
A complete basic set consists of three essential pieces:
- Ham slicing knife: Long, flexible blade for cutting thin slices.
- Boning or paring knife: Short, rigid blade for removing the hard rind and separating meat from the bone.
- Honing steel (or sharpener): Steel rod for realigning and touching up the edge before each use.
Dimples (or hollows) create micro-air pockets between the metal and the ham. This prevents the fat from creating a suction effect, stopping the slice from sticking to the blade and allowing for a smooth cutting motion.
A honing steel does not repair a damaged edge; instead, it realigns it. Slide the knife blade from heel to tip at an angle of about 15–20° against the rod, alternating sides with smooth, steady strokes before you start cutting.
Never. Abrasive detergents and extreme heat dull the blade's edge, accelerate steel oxidation, and damage the handle. Always wash them by hand using warm water and mild soap, and dry them immediately with a dry cloth.
The cotton cover protects the piece from dust, insects, and direct light while allowing it to "breathe." Never cover the entire piece with plastic or cling film, as trapped moisture promotes mold growth.
