As you know, cheese is a living food, so it has a limited preservation. The most appropriate is to consume it once opened in one time, but many times this is impossible; That is why we have prepared this guide depending on the different types of cheese you want to keep.

You should keep in mind that it may be affected by temperature changes. The cold will cause it to overdry and the heat will cause you to sweat and lose some of its natural fat by modifying texture and taste.

In order to keep them in perfect condition, soft cheeses must be between 3ºC and 7ºC. This means that the best place will almost always be the refrigerator:

  • Fresh cheeses are the first to create mold. Once opened and removed from its packaging, we will have to store them in a lunch box or any container with a lid. Special care must be taken, since cheeses may be fermented by the lack of oxygen and its smell is not pleasant.

  • Cheeses such as Camembert will be preserved much better in their original packaging. Once opened, you must cover the cut with transparent plastic film.

  • Cheeses such as Roquefort or Cabrales, which come without packaging, should rest on a tray completely covered with transparent film. If you do not want to impregnate the entire refrigerator with its smell, you can put that tray in a container with a lid.

* The maximum cold storage time of these cheeses is 15 to 20 days.

It is recommended to keep hard cheeses between 7ºC and 12ºC. It is best to keep it in the refrigerator and make sure it is in the least cold part (the vegetable drawer, for example). Even so, we can store it without cold for a few days without problems since it is a cured (dried) product.

  • In this section would be the Manchegos, whether they are tender, cured or semi-cured. Once started, you should cover the cut with transparent film or wax paper, letting the rest of the cheese breathe.

  • Another way to preserve cured and semi-cured cheeses is to dip them in virgin olive oil. In addition you can also add aromatic herbs such as thyme, or rosemary, which will give a different hue to the flavor.
