Der Artisan Ziegenkäse von der Garrotxa de Sant Gil d’Albió, wird hergestellt mit pasteurisierter Ziegenmilch, Quark Enzym und zehlt mit 2 Monaten Heilungszeit. Dieser Ziegenkäse hat einen leicht salzigen Geschmack und eine cremige textur. Eines der Merckmale dieses Ziegenkäse ist die Schimmelrinde, diese ist das ergebnis einesl langen Prozesses, indem ein Rindenpilz bekannt als "Grau Penicillium" sich im Rinde des Ziegenkäse eintwickelt. Dieser Rindenpilz neutralisiert die Säure des Käse und macht es süßer.

Wir empfehlen diesen Ziegenkäse mit gerösteten Brotscheiben mit Tomaten zu servieren, Sie können dies mit einem guten Rotwein begleiten.
