In the province of Jaen, Villanueva de la Reina, GALGON 99, S.L., is located in the foothills of Sierra Morena, between Bailen and Andujar, 400 meters.
With over 200 hectares of olive groves, its precious fruit and careful manipulation, they get some extra virgin olive oils enjoying the quality to satisfy the most discerning palates. Olive Oils Oro Bailen has opted from the outset for the quality of its products over any trade policy.
GALGÓN 99, S.L. born in 2005 as producer, packager and marketer of the Extra Virgin olive oil, from olives produced in the olive groves of the family.
This is the third generation that today is linked to the production of olive oil (harvesters), and it is in 1999 when Gonzalez Galvez family acquires its 2 olive farms, “La Casa del Agua” and “Los Juncales”, the first a farm called “de campiña” and where the mill is located and the second a farm of mountain range (Sierra Morena).
Both “Juncales”, as “La Casa del Agua” follows a traditional framework, a framework that is 10 meters x 10 meters.
Grinding and beating is performed cold, with temperatures below 21 ° C, and very short shake, thus maintaining all volatile components, causing aromas and fruity flavors that are transmitted from fruit to juice.
After the beating is time for the physical centrifugation, consisting in the separation of the liquid part as a result of the different densities with the components of the olive.
As a final step for processing oil, it is cleaned in a vertical centrifuge, which as in the horizontal, consist on the liquid separation (olive oil)- liquid (alpechín), because of their different densities. It is in this vertical output, when the master makes the classification of the olive oil, which will go to one or the other deposits, through tasting process.
