The Unaiak matured cheese in portion is made using a mixture of pasteurized cow's and sheep's milk from Vizcaya (Basque Country). This is a Saroi cheese, which is one of the oldest among Basque cheeses. The maturation period of this cheese is between 3 and 6 months.
This cheese is classified among the 84 best cheeses in the world, a classification done by the World Cheese Awards 2021-2022 and obtained the gold medal in its category at the 35th Salón Gourmets Madrid.
We recommend taking the Unaiak matured cheese mixed with pasteurized sheep and cow milk as an appetizer or starter, as part of a high-quality cheese board to be served with a glass of wine.
