Bideki smoked cheese in portion is made with latxa sheep's milk, a native breed from the area of the Basque Country and with a maturation period of 6 months.

This cheese has Designation of Origin Idiazabal distinctive and has been treated by natural smoking with Navarra beech wood smoke, which gives the cheese a unique touch of smoke in flavor.
