Beiardi matured cheese is made using a mixture of raw cow's milk primarily, and raw sheep's milk. Milk from cows and sheep from the Basque Country and Navarre have been used, guaranteeing the quality of the product and ensuring that the raw material is locally sourced.
The maturation period for this cheese is 6 months. Its rind is smooth, the cheese is ivory in color and its flavor is creamy and smooth.
We recommend taking the matured Beiardi Cheese mixes raw sheep and cow milk as an aperitif or starter, as part of a high quality cheese plate to serve alone with a good glass of wine.
